The Ultimate Spring Rolls Guide

 

One of my favourite foods to cook and eat is spring rolls.

How do spring rolls work?

They are entirely adjustable and configurable, and there are practically hundreds of versions. They come freshly prepared with either a peanut sauce or a mixture of fish sauces for dipping. They are suitable for breakfast, lunch, supper, snacks, and appetizers.

There are several names for spring rolls, including gi cun (which translates to salad rolls) and nem cun (which translates to meat rolls), as well as summer rolls, Vietnamese rolls, crystal rolls, soft rolls, cold rolls, and fresh rolls made of rice paper.


Why would you cook spring rolls at home?

The biggest reason to prepare spring rolls at home rather than getting them out is that they are always fresh! A freshly prepared spring roll is unrivalled, in my opinion. Believe me when I tell that a freshly rolled spring roll tastes completely different. The beef is warm, the veggies are crisp and crunchy, and the rice paper is soft and chewy. Additionally, when you prepare spring rolls at home, you may add your very own preferred fillings and sauces to create them precisely as you like. Making spring rolls at home ensures that your roll is customised for you and you alone. Restaurant spring rolls often use a basic, everyone-pleases recipe. You decide how much protein and how many vegetables go into your roll. Even the roll's size and thickness are entirely up to you. A lengthy, leisurely, group supper prepared by the cook's own hands is also pleasant. It fosters interpersonal ties.


How to host a party with spring rolls

Making spring rolls is one of the simplest and healthiest meals you can prepare at home, despite the fact that it may appear scary if you've never done it before. This is how you do it:

Gather your ingredients in Step 1

Rice paper, veggies, protein (if desired), and sauce components are required. The best course of action is to write a list, go shopping if necessary, and have everything prepared. Here is an example grocery list for making chicken spring rolls:

1 pound of chicken, 1 knob of ginger, 1 stalk of lemongrass, 1 knob of cilantro, 1 knob of mint, 1 knob of Thai basil or basil, 1 knob of rice vermicelli noodles, 1 lime, and 2 tablespoons of fish sauce.

Make sure you have sugar, oil, and garlic in your cupboard.

Produce the sauce in Step 2

Make a quick fish sauce vinaigrette to use as a dipping sauce beforehand. 1-2 tbsp sugar are gently mashed with 1 clove of minced garlic. Add 2 tablespoons of fish sauce, 1 tablespoon of fresh lime juice, and 1 cup of water. Set aside after combining everything until the sugar has dissolved.

Prepare the veggies and vermicelli in step 3.

The basil, cilantro, mint, and lettuce must be washed and dried. Cucumber should be sliced or julienned. Vermicelli should be cooked as directed on the box, in a saucepan of boiling water, then drained, rinsed, and thoroughly drained.

4. Prepare the protein.

Cut the chicken (or your preferred protein; you may choose from shrimp, hog shoulder, sirloin, or tofu) into strips. Add the chicken to a bowl along with the sugar, oil, ginger, garlic, lemongrass, and fish sauce. Allow to marinade for at least 15 minutes. If you're adept at planning ahead, marinating for an entire day is significantly less labour and far more delicious. After the meat has marinated, pan fried it over medium-high heat until it begins to faintly brown. From the pan, remove the cooked meat. (In our household, we bring it raw to the table and fried it quickly on a butane or electric grill.)

Step 5: Set the table up.

Alternatively, precook your meats right before setting the table so they are as hot as possible. If you feel inclined, you can place a heat source in the centre of the table to cook your meats. Put your rice paper, meat, and veggies on shared plates as shown in the illustration below. Warm water should be prepared in a few large bowls to dip rice paper in. Obtain sufficient sauce bowls so that each person has their own sauce. Grab some beverages, plates for everyone, and have a good time.


Advice, techniques, and commonly asked questions

Describe rice paper.

Rice paper is an edible wrapper produced from rice (and occasionally tapioca) flour. It is referred to as bánh tráng in Vietnamese. They are sold dried, and before using them, you must rehydrate them in water at home. They may be grilled to make rice crackers or used in salads, spring rolls, and imperial rolls. They are available in a wide range of sizes, and in addition to the standard round ones, they also sell squares, triangles, and half circles. Since they curl when exposed to air, we like to keep them in the packaging and only take a few out at a time.

The best way to make rice paper

A large shallow basin of hot tap water is the ideal setting for preparing rice paper. Take a piece of rice paper, soak it fully in the water, and then take it out right away. It will rehydrate, soften, and become malleable if you place it on a plate or cutting board and leave it there for 5 to 10 seconds.


Advice on how to soak rice paper

Don't go overboard. It's important not to wet your rice paper since doing so would cause it to become exceedingly brittle and difficult to roll.

Dip. All you have to do is take the rice paper sheet, soak it completely, remove it, and lay it flat. The rice paper will be thoroughly rehydrated by the water that adheres to it. You'll end up with a soggy mess if you follow the advice in the blogs out there to soak rice paper for 10–15 seconds.

You don't need hot water that is boiling. Use warm or even hot water from the faucet. The rice paper will become too soft if your water is too hot.

See what's in the food. If you're having problems wrapping your spring rolls, check the rice paper package's ingredients list. It is simpler to wrap rice paper that contains tapioca since it has more give and chewiness (like boba!). Beginners may find it a little more challenging to work with rice paper that is made entirely of rice.

Use a rimmed baking sheet or a big shallow basin. Hold the rice paper and just spin it to dip it in the water since it is simpler to slip it into a shallow basin of water than a regular bowl. Spring roll technique

If you've ever rolled a burrito, you'll be an expert at rolling a spring roll because they are so similar to one another. The better your roll, the tighter it can be without breaking the paper.

Dip. Put the rice paper sheet in the water, remove it right away, and set it on a flat surface like a plate or cutting board. While you arrange your components, the rice paper will rehydrate and become more pliable.

Arrange. Your fillings should be placed on the rice paper's bottom third. A helpful hint: Whatever you lay down initially will be visible on the roll's outside.

Fold. Fold the edges in toward the centre to cover the filling after folding the bottom up and over it to secure it in place.

Roll. Roll up, tucking and rolling from the bottom to the top. Dip and savour!

Ingredients for spring rolls 


Protein

The best way to prepare protein is to fry it after marinating it. Many spring roll recipes call for boiling or pan-fried protein, but marinating your protein first can help you layer flavours. A traditional marinade of sweet and heat is our favourite. All proteins respond well to it, and it tastes fantastic! Prepare the marinade, add your protein (seafood, chicken, hog, beef, or tofu), and let it sit for at least an hour before pan-frying or grilling it.


Vegetables

Consider leafy greens like spinach, cabbage, red leaf lettuce, butter lettuce, iceberg lettuce, and other varieties. Cucumbers, carrots, peppers, radishes, and daikon are a few examples of crunchy/firm veggies that perform well when chopped into sticks.


Fruit

The subtle sweetness of sliced mango, peaches, or avocado can be added to your rolls. Fruits with a crunch, such as julienned apples, pears, or apple pears, are also tasty.


Herbs

Herbs are a need in every way. You need basil and cilantro, ideally Thai basil, at the very least. We also enjoy shiso and mint. Also tasty are scallions. If your area has a Vietnamese grocery shop, they should offer a wide variety of more Vietnamese herbs that you may purchase.


Noodles

We seldom use noodles while preparing salad rolls at home; instead, we like to stuff them with veggies. However, if you must use noodles, choose thin rice vermicelli. Simply prepare it as directed on the package, drain, and thoroughly rinse.


What to serve as a salad roll dip

The dipping sauce is regarded as the spring rolls' most crucial component.

Vinaigrette with fish sauce

This is our go-to dip because it is flavorful, salty, sour, and sweet.

Crush 1 garlic clove, 1 Thai chilli (optional), and 1-2 tbsp sugar in a bowl or glass measuring cup. Add 2 tbsp fish sauce, 1 cup water, and the juice of 1/2 a lime. Mix the sugar until it melts. Here is more information on nuoc mam.

peanut ketchup

You may create this creamy and nutty dish using almond butter or peanut butter, as we do.

2 tbsp hoisin sauce, 1 tbsp smooth peanut butter (or other nut butter), 1 tbsp lime juice, 1 chopped clove of garlic, and 1-2 tbsp water should all be combined in a small dish. To taste, toss in sambal oelak if you like it hot.

Keep it simple by serving with some hoisin that has been spiced up with lime, garlic, and some sugar.

Can spring rolls be prepared in advance?

It is possible, but the rice paper won't taste as fresh and will probably get a little firmer. Make careful to separately wrap each roll in plastic wrap if you wish to prepare them ahead of time to prevent drying out. The only way to protect them is to individually wrap them since if you try to leave them together, they will stick together and tear. For up to three days, they can be stored separately wrapped and in a closed container in the refrigerator.
